Authentic Texas Recipe of the Month:  6 Large semi-green Tomatoes

1 C Cornmeal

Shortening

Peal and slice tomatoes 1/4 - 1/2 inch thick

Salt and pepper tomatoes.

Dip each slice in cornmeal on both sides, and have 1 1/2 inch shortening frying hot in cast iron skillet.

Drop into shortening and leave until brown.

Texas Activities January 2007

For the ever increasing bird watchers over the nation, the West Texas Winter Birding Tour last from December 26, to January 2nd.   The tour includes El Paso's Franklin Mountains, Guadalupe Mountains National Park, Davis Mountains State Park, the Chihuahuan Desert, and West Texas grasslands.  By the time you are reading this article, the official tour will be over, but if you have a RV and are ready to go, there is still time to catch up on some great Texas bird watching.  Top 10 places to watch birds during the year are listed below (see the article in December about the costal bird watching).  http://wingsbirds.com/tours/birdlist/130  Interested in list of birds seen along the coastal areas in previous years? King on the 22nd  in El Paso and in Galveston the 25th – 27th.
