Authentic Texas Recipe of the Month: 

Ham Bone Soup

1 meaty ham bone    2 qt. water    3 stalks celery (chop)  5 med. Tomatoes (chop)  3 potatoes peeled and cubed    1 cup broken snap beans    ¼ cup hulled peas    

1 cup butter beans

¼ cup diced turnips    1 T. Sugar    ½ tsp. ground cloves    2 tsp. pepper    1 ear fresh corn and cut corn from cob (or 1 pk frozen).  Also onions, carrots, mushrooms, tomatoes substituted or can be added.

Combine the ham bone and water (cover ham bone)  in covered cooker, bring to a boil then cover container with reduced heat and cook 1 hour or until meat is tender.  Place hambone in large soup kettle.. Remove bone and remove meat from bone. Chop meat and return to broth. Add carrot, celery and onion; simmer 30 minutes. Add remaining vegetables; simmer 1 to 1 1/2 hours, season with salt and pepper. Heat to serving temperature..  Makes 15 cups.

Clark, who learned how to make fried pies from her grandmother and later produced them from home for sale in Gainesville, started the restaurant in 1982. The Wimberley Jazz at Cypress Creek is a quality oriented series of live jazz performances held in a comfortable intimate club that seats no more than 100 people. Now in its second decade, this amazing annual event has produced some of the most incredible musical moments in Texas history…if you doubt this, just come and see for yourself. There is not a series of intimate, more enjoyable jazz concerts that can be found any where in the U.S. than here at CCC each February. All shows are "smoke-free" with acoustics to rival many larger "music halls". Another huge "plus" is the broad selection of jazz styles; Producer Bruce Calkins has managed to "tap" into the upper echelon of Texas' finest players…and beyond. Although the vast majority of artists hail from Texas, many travel from afar, such as Guitarist Jackie King from San Francisco, Kellye Gray & Shelly Berg from LA, & Pat Malone from Santa Fe, for example. This is truly an amazing experience, best summed up by a quote from some folks that just happen to be traveling through the hill country from New York city, and took in a couple of shows a few years back; they wrote: "we live in NYC and frequent local jazz clubs quite a bit, and have never heard anything better than what we experienced at your Jazz Festival…and for much less cost. Thank you!"

 

Mardi Gras in Texas

 

In just a few days, the streets of Historic Downtown Galveston will be transformed into a sea of green, purple, and gold. That's right, Mardi Gras! Galveston 2007 is just around the corner, and the Galveston Park Board of Trustees and the Mardi Gras Galveston Committee have already begun planning for the festivities.

This longstanding tradition of merrymaking and revelry on the island will kick off on February 9th and last through February 20th 2007. More than 250,000 people attend Mardi Gras! Mardi Gras of Southeast Texas is a traditional Mardi Gras celebration, featuring six parades that feature Philadelphia Mummers, arts and crafts, assorted foods, a children's fun zone, fireworks, carnival rides, and street entertainers. Three stages feature live music with Texas country artists Pat Green and Robert Earl Keen, Zydeco legends Keith Frank, Rosie Ledet, Jamie Bergeron and the Bayou Katz and Satisfaction - a tribute to the Rolling Stones.

As in previous years, the 3rd Annual Mardi Gras Celebration will take place on Fat Tuesday. The event begins with a parade including 40+ decorative floats competing for a $1,000 prize. The parade ends at Tierney’s Duck Inn, a restaurant that has been in Lake Dallas for over 56 years. The Duck Inn’s parking lot is transformed into a New Orleans style party with great Cajun food, a petting zoo, pony rides, bounce houses and contests for the kids, and live music. The famous N'awlins Gumbo Kings will be performing once again as well as some local bands that play top 40 and oldies type music. Inside The Duck Inn you’ll find their classic menu along with Cajun favorites, live music, and a costume contest for the adults.

The Texas Cowboy Poetry Gathering features traditional cowboy music in most of the poetry and storytelling sessions. All music is live and performed on acoustical instruments by working cowboys.
