Texas Shrimp

Take about 8 oz. per person of extra large uncooked shrimp, some Cabela's Tequila Lime seasoning* ($7.99 and can be ordered online), take some cherry tomatoes, onions (cut in quartered hunks), and any other vegetables you like to grill (like squash, etc), and lay out while the shrimp are covered in the seasoning and it is also good to marinate the shrimp in Tequila for 15 minutes prior to putting the seasoning and marinate it in. After about 30 minutes put the items on a skewer in rotation, salt and pepper vegetables, put on the grill until the shrimp turn very pink. Also it is good to put ears of corn on the grill mopped with olive oil and the same Tequila Lime seasoning and cook until there are a few "browned" kernels over the ear. Put the above on a bed of wild rice, Texas toast, and you are good to dine on "one great Texas meal." *If you don't have the seasoning, use Tequila and fresh lime juice, chives, parsley, cilantro, sea salt, etc. on the shrimp.
